Bubbakoo's Burritos Opens in East Windsor

Mayor Janice S. Mironov and Council Members David Russell, Richard Eland, Joseph Miczak, Johnnie Whittington and John Zoller joined business owners and staff to celebrate the grand opening of Bubbakoo’s Burritos, located in the Carduner Center at the intersection of Route 130 South and Princeton Hightstown Road (Route 571).
Bubbakoo’s Burritos is a Mexican-fusion restaurant offering a customizable menu featuring bowls, burritos, tacos, quesadillas and taco salads, with an emphasis on fresh ingredients and made-to-order selections.
Founded in Point Pleasant, New Jersey, Bubbakoo’s Burritos began franchising in 2016 and has since expanded to more than 150 locations across 17 states. The growing New Jersey-based restaurant brand was recognized in 2024 on Entrepreneur Magazine’s 46th Annual Franchise 500 list.
Mayor Mironov stated, “East Windsor Township welcomes Bubbakoo’s Burritos, another popular casual dining option adding to our community’s diverse selection of restaurants and eateries. Their highly visible location at the busy Route 130/571 intersection provides an excellent location to attract residents, visitors and area patrons.”
