November 26, 2025 - Plaza Azteca Opens in the former Charlie Browns free standing 6,300 square foot building in the East Windsor Village Shopping Center on Princeton-Hightstown Road. Plaza Azteca, a full-service sit-down restaurant which has a liquor license, specializes in Mexican food and features a broad menu of chicken, steak, seafood and vegetarian dishes, salads varieties of burritos and chimichangas, enchiladas and quesadillas, tacos and fajitas. The restaurant has locations in 11 states, with two other New Jersey locations in Sicklerville and Marlton. Current hours are Monday through Thursday 11 A.M. to 10 P.M., Friday 11 A.M. to 10:30 P.M. and Sunday 11:30 A.M. to 9:30 P.M. East Windsor Recreation Department Holiday Home Decorating Competition Is Open for Township Residents. All East Windsor residents are welcome to enter their home into the competition, simply register your address and decorate your home for the Holiday season. Decorations will be judged on creativity, not by the size or quantity of lights or displays. Displays will be reviewed from 5 P.M. to 7:30 P.M. on weeknights between Monday, December 8 and Wednesday, December 17 by Recreation Commission members. There will be winners in both home and townhome/apartment categories. Prizes donated by local businesses will be provided to the winners as well as recognition in a future edition of the E-News. Citizens can apply to serve on the Clean Communities Advisory Committee, Commission on Aging, East Windsor Municipal Utilities Authority, Economic Development Committee, Environmental Commission, Health Advisory Board, Planning Board, Recreation Commission, Zoning Board of Adjustment and the East Windsor Municipal Alliance for the Prevention of Substance Abuse. - High School Students Invited to Serve as Student Members of East Windsor Township Boards and Commissions. The boards and commissions included in the program are Commission on Aging, Clean Communities Committee, Economic Development Commission, Environmental Commission, Health Advisory Committee and Recreation Commission, as well as the East Windsor Municipal Alliance for the Prevention of Substance Abuse.
